I LOVE MY JOB!! I decided to try my hand at alternative uses for one of my favorites..... Blackberry Pepper Jelly. It is a versatile thing working well on biscuits, sandwiches, grits, cheese boards, etc. I wanted to take it a step further so I spent the better part of an afternoon working on a cocktail using it. Did I already mention...I LOVE MY JOB!!!
This recipe is so easy yet oh so satisfying. Just the right amount of bite and sweetness with a little kick from the bourbon. Hope you enjoy it as much as I do.
1 heaping tablespoon of Blackberry Pepper Jelly
2 ounces of Bourbon (I used Evan Williams for this one but go with what you like)
3/4 of an ounce of Fresh squeezed lemon juice (Myer Lemon is even better for this if they are in season)
A dash of agave syrup
In a cocktail shaker add the Blackberry Pepper Jelly and the bourbon. Using a spoon, mash the jelly along the side of the shaker and stir until fully dissolved. Add ice, the lemon juice, and the agave. Stir until well combined and chilled. Strain into a double old fashioned glass and enjoy.
